The Culinary Institute of America at Greystone

History

The Greystone building began as Greystone Cellars, and was built in 1889 as a gravity-flow cooperative winery serving upper Napa Valley. It was the largest stone winery in the world, and features 22-inch-thick walls made of local tufa stone, and was designed by Hamden McIntyre, who also designed Chateau Montelena, Trefethen, Inglenook and Far Niente.

The Culinary Institute of America purchased the property in 1993 and renovated the building, opening it in 1995 for classes for food and wine professionals from around the globe.
